Cooking, service, and the art of the sale. I have been in the food and beverage industry sense I was knee high to Chef Ramsey's ass. Worked my way from dish room to the head chef's office. From busboy to FOH manager, to being a sideline consultant. I am a rounds man, a "Jack of all trades", if you will. Fast food, casual, fine dinning, quick service, banquet, catering, and then some. I learned from great chefs. Not because someone told them they were good chefs, but because they knew they were great chefs. There is no in between in this business either you are, or you are not. Nothing else.
You have to be completely insane to choose to be in this business, or insanely passionate. I have enough of both to make me the clear choice for the show. I have spent my entire career learning from others in every aspect of the business on a constant basis. I like to call it "paid education". From these experiences I have learned from their mistakes, and their successes so that when I can afford to open my place it won't fail like nine out of ten do. Chef Ramsey much respect, but you don't scare me! I understand why you freak out. If you have a guy claiming to be a chef who can't cook a freaking steak medium rare he deserves to be yelled at and humiliated.
